ZUCCHINI BREAD 3 eggs 2 1/4 c. sugar 3 tsp. vanilla 1 c. oil 2 c. grated, pared zucchini (I don't peel mine) 3 c. all-purpose flour 1/4 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 3 tsp. cinnamon 1 c. nuts, chopped 3/4 c. raisins Beat eggs until light and fluffy. Add sugar, vanilla and oil. Blend well. Stir in grated zucchini. Sift together flour, baking powder, salt, soda and cinnamon. Blend with cream mixture. Fold in the chopped nuts and raisins. Grease and flour 2 (9 x 5 x 2-inch) loaf pans. Bake in a preheated 350 degrees oven for 1 hour or until toothpick comes out clean. Yields 2 loaves. Yes, there really is a Zucchini Fairy.
