BASIC PIZZA DOUGH 1 pkg. dried yeast 1 1/3 c. lukewarm water 2 Tbsp. vegetable oil 1 tsp. salt (optional) 4 c. sifted flour Dissolve yeast in lukewarm water. Add oil. Sift flour and salt (optional) into bowl. Add yeast mixture and knead until smooth, about 10 minutes. Cover with towel and let rise until dough is doubled in bulk, about 2 hours. Using 2 table- spoons oil, grease a cookie sheet. Pat and stretch risen dough to fit pan. Spread favorite sauce on top. Add any other toppings; eg. cheese, mushrooms, etc. Allow to rise 10 min- utes. Bake in preheated oven at 400 degrees about 25 minutes. Pizza is done when bottom is sufficiently brown. Pizza can also be made up and then frozen until later date. Recommended storage time in the freezer is no more than 2 months. Follow about steps when making basic dough. Put risen dough into pan. Put sauce and other toppings on top. Let rise additional 10 minutes. Using aluminum foil, wrap pizza, along with pan and freeze. When ready to use, unwrap pizza and place in preheated 400 degrees oven for 25 to 30 minutes.
