FAVORITE DINNER ROLLS

1 qt. milk, scalded
1 c. shortening
1 c. sugar
2 pkg. yeast, dissolved in 4
Tbsp. very warm water
1 Tbsp. salt
1 heaping tsp. baking powder
1 level tsp. soda
10 c. flour

Scald milk; add shortening and sugar. Cool. Add
dissolved yeast. Add about 5 1/2 cups sifted flour to make a
very thin dough. Let rise 2 hours until double. Add remaining
flour and other dry ingredients, sifted in. Mix well. Put on
a floured board, adding flour as required to knead well for 10
minutes. Store dough in refrigerator or use immediately. Form
rolls 2 hours before baking and let rise until double in bulk.
Bake at 375 degrees for 15 to 20 minutes. Makes 8 to 10 dozen rolls.
Can be used over a period of a week if refrigerated. Can half
recipe.
Cloverleaf Rolls: Roll 3 small balls and place in
greased muffin cups.
Round Rolls: Roll 1 large ball and place in greased
muffin tin cups.
Flat Rolls: Roll large balls and place in greased cake
pan.
Cinnamon Rolls: Use rolling pin to make a large flat
base 1-inch thick. Spread soft butter, cinnamon and sugar.
Roll up and cut in 2-inch rolls. Allow to rise. Bake.
