LOW CALORIE OATMEAL MUFFINS 1 c. quick cooking oats, uncooked 3/4 c. all-purpose flour 3/4 c. whole wheat flour 1 Tbsp. baking powder 1/8 tsp. salt 1 egg, beaten 3 Tbsp. honey 2 Tbsp. vegetable oil 1 c. skim milk vegetable cooking spray Combine oats, all-purpose flour, wheat flour, baking powder and salt in a mixing bowl. Make a well in center of mixture; set aside. Combine egg, honey, oil and milk and mix well. Add liquid mixture to dry ingredients. Stir just until moistened. Spoon into muffin pans coated with cooking spray, filling 2/3 full. Bake at 350 degrees for 18 minutes. Yield: 14 muffins.
