BAKED ZITI Sauce: 1/4 c. olive oil 1 c. fine chopped onion 1 clove garlic, crushed 1 (2 lb. 3 oz.) Italian tomato 1 (6 oz.) tomato paste 2 Tbsp. chopped parsley 1 Tbsp. salt 1 Tbsp. sugar 1 tsp. oregano 1/2 tsp. basil 1/4 tsp. pepper Saute onions and garlic in oil, add undrained tomatoes, paste, water (1 1/2 cups), parsley, salt, pepper, sugar and oregano. Smash tomatoes, simmer 1 hour. Cheese: 2 (15 oz.) Ricotta 1 (8 oz.) Mozzarella 1/3 c. grated Parmesan 2 eggs 1 Tbsp. chopped parsley 1 tsp. salt 1/4 tsp. pepper Mix together. Then cook 1 pound ziti. Layer ziti, cheese and sauce; repeat, end with sauce. Top with 3 table- spoons Parmesan. Bake at 350 degrees for 45 minutes.
