SMOTHERED OKRA 3/4 c. oil 1 fresh tomato, chopped fine 1 onion, chopped fine 1/2 c. bell pepper, chopped fine 3 cloves garlic, chopped fine 2 1/2 lb. cut okra 1 Tbsp. tomato paste 1 tsp. salt 1/4 tsp. cayenne (red pepper) 1/4 tsp. black pepper Smother okra in oil for 15 minutes over medium heat, stirring frequently. Add onions, garlic, bell pepper, tomato and seasoning. Cook for 30 minutes. Then add tomato paste. Cook an additional 15 minutes. Ham may be added for flavor. Serves 6. Instead of opening up a can for 1 tablespoon tomato paste, I add 1 more chopped tomato and cook until it is thick enough. This is the way I love okra. The recipe came from Don's, a chain of seafood restaurants that started in Louisi- ana. I love their food. If you object to a slimy taste in okra, you won't get it here.
