VIDALIA ONION QUICHE 1/4 c. melted butter 1 c. crushed Ritz crackers 1 c. thinly sliced Vidalia onions 2 Tbsp. butter 2 well beaten eggs 3/4 tsp. salt 1 c. evaporated milk Combine 1/4 cup melted butter and crackers. Press into 9-inch pie pan. Saute sliced onions in 2 tablespoons butter. Place in pie shell. Top with eggs, milk and salt which has been combined. Sprinkle with 1 cup grated sharp cheese. Bake for 30 minutes at 350 degrees. Serves 6. May use Spanish sweet onions. Yum yum.
