BAKED VEGETABLES AU GRATIN 2 Tbsp. butter or margarine 1/4 c. onion, chopped 1 pt. frozen green beans 1 pt. frozen whole kernel corn 1 pt. frozen zucchini 1/2 pt. frozen tomato wedges 1/2 tsp. salt dash of pepper 1 tsp. dried basil leaves 2 slices white bread, cut in small cubes 1/2 c. Cheddar cheese, grated Preheat oven to 350 degrees. In butter, saute onion, stirring until tender, about 5 minutes. In a 2 quart casserole dish, combine onion, green beans , corn, zucchini and tomato; toss to combine. Sprinkle with salt, pepper and basil. Mix well. Dot top with butter. Sprinkle edge of casserole with bread cubes, then cheese. Bake for 60 minutes or until vegetables are tender and cheese is melted. Serves 6.
