STUFFED PEPPERS 5 or 6 green peppers, cut off tops and remove seeds 1 lb. ground beef, uncooked 1/2 c. chopped onions 1 1/2 c. cooked rice 1/2 tsp. salt 1 egg Combine all ingredients; mix well. Spoon into peppers. Place in baking dish. Mix large can (15 ounces) tomato sauce with a can of water (use tomato sauce can to measure water). Pour over stuffed peppers. Bake covered for about 60 minutes at 350 degrees. Optional: Sprinkle 1/2 to 1 cup Mozzarella cheese over peppers and bake five to ten minutes more. If you have extra stuffing left over, shape into 3-inch balls and place in baking dish with stuffed peppers and cook.
