QUICK CABBAGE AND BACON 1 head cabbage 1 can Ro-Tel tomatoes 6 slices bacon Fry bacon slices crisp; drain and set aside. Some bacon grease may need to be dipped out of skillet. Be sure and leave enough to cover the bottom of the skillet. Tear tender cabbage leaves into bite size pieces. Cook cabbage in skillet with bacon drippings. When cabbage starts to change color and begins to get tender, add Ro-Tel tomatoes. A small amount of water may be added if needed. Simmer on medium heat until cabbage is tender and most of the liquid is cooked out. Crumble bacon and stir into cabbage. Do not cook long after bacon is added, or bacon will get tough.
