SPINACH PIE 2 lb. spinach 1 bunch green onions 1 lb. Greek Feta cheese, crumbled 1 lb. melted butter 1 lb. filo pastry sheets 7 eggs salt and pepper to taste Wash spinach and allow to drain overnight in colander. Parboil spinach and drain. Chop spinach and green onions in large bowl. Add crumbled cheese, unbeaten eggs and seasonings. Pour half of the melted butter over spinach mixture and toss. Butter baking pan; line with pastry sheets and butter every 4 sheets. Pour spinach mixture in pan and then cover with remaining pastry sheets. Bake at 350 degrees for 30 minutes. Cool and cut into squares.
