CRISPY POTATO WEDGES (Jo-Jo's) 1/4 c. olive oil 1/2 tsp. salt 1/4 tsp. pepper 1/2 tsp. each: dried basil, thyme and oregano leaves 1/4 tsp. paprika 4 to 6 medium potatoes 1/4 to 1/2 c. grated Parmesan cheese Preparation time: 20 minutes. Baking time: 30 minutes. Combine olive oil and seasonings in a bowl. Scrub unpeeled potatoes well. Cut each potato in half lengthwise, then in thirds. Coat each slice in the seasoned oil. Spread in a single layer on a greased baking sheet. Bake at 450 degrees for 15 minutes. Sprinkle with the cheese. Bake 15 minutes longer. Good served with pork chops, grilled chicken, roasts or meat loaf. Note: I used 2 to 3 teaspoons of Mrs. Dash salt-free seasoning instead of the others and it comes out okay!
