SWEET POTATO CASSEROLE 3 c. hot, mashed, cooked sweet potatoes 1/2 c. sugar 1/2 tsp. salt 2 large eggs 1/4 c. soft margarine 1/2 tsp. vanilla extract 1/2 c. milk 1/2 c. light brown sugar 1/3 c. all-purpose flour 1 c. chopped pecans 3 Tbsp. soft margarine In large bowl combine sweet potatoes, sugar, salt, eggs, 1/4 cup margarine, vanilla and milk. Place in a greased 1 1/2 quart baking dish. In small bowl combine brown sugar, flour, pecans and remaining margarine. Top sweet potato casserole with crumbled mixture. Bake in a 350 degrees oven for 35 minutes. If chilled, bake for 45 minutes.
