CARROT-POTATO PANCAKES 1 c. grated raw carrots 1 c. grated raw potato 1/3 c. finely chopped fresh onion 1/2 c. milk 1/2 c. unsifted all-purpose flour 2 eggs, slightly beaten 1 tsp. salt In a medium bowl combine carrots, potatoes and onion. Add remaining ingredients; mix well. Drop by tablespoonful on hot greased griddle or skillet. Spread to form a 3 inch circle. Fry until golden brown (about 3 minutes on each side, turning once). Makes about 18 little pancakes. Enjoy.
