SKILLET "FRIED" HOMINY 2 c. drained yellow or white hominy, drained 4 slices bacon 1 small onion, chopped salt and pepper to taste Fry bacon and remove from skillet. (Bacon should be crisp so that it can be crumbled.) Brown onion in bacon grease. Remove all but 2 tablespoons of bacon grease from skillet and add hominy and heat. Crumble crisp bacon and add to hominy mixture. Drain grease from mixture and serve.
