BAKED ONION AND CHEESE 4 c. sliced cooking onions 1/2 tsp. salt 1 c. boiling water 2 Tbsp. margarine 2 Tbsp. flour 1/2 tsp. salt 1/4 tsp. pepper 1 c. milk 1/4 c. onion liquid 3/4 c. grated Cheddar cheese 3/4 c. buttered bread crumbs Cook sliced onions in boiling water and salt for 10 minutes. Drain, reserving 1/4 cup of liquid for sauce. Put onions in greased baking dish. To make sauce melt margarine, blend in flour, salt and pepper. Stir in milk. Gradually, add onion liquid. Cook over medium heat until thickened. Remove from heat. Add cheese. Stir until cheese is melted. Pour over onions. Top with buttered bread crumbs. Bake at 375 degrees for 30 minutes.
