CHEESE STUFFED POTATOES 4 medium baking potatoes, baked 1/4 c. butter or margarine 1/2 c. milk salt and pepper to taste 1 1/2 c. shredded Cheddar cheese (1/4 c. reserved) 1 to 2 Tbsp. finely chopped onion Halve potatoes lengthwise and carefully scoop out insides. Set shells aside. Combine potatoes, butter, milk, salt and pepper in mixing bowl. Mash until fluffy. Stir in 1 1/4 cups Cheddar cheese and the onion. Spoon potato mixture into potato shells. Sprinkle remaining 1/4 cup cheese on top. Bake in 350 degrees oven for 20 to 30 minutes.
