TWICE BAKED POTATOES 4 large baked potatoes 1 1/2 c. (6 oz.) grated sharp Cheddar 2 Tbsp. milk 1/4 c. margarine 1/2 tsp. salt dash of pepper 2 Tbsp. chopped chives 4 crisply cooked bacon slices, crumbled Slice each potato in half. Scoop out centers. Mash potato with 1 cup cheese, milk, margarine and seasonings. Beat until fluffy. Add additional milk if needed. Stir in 1 tablespoon chives and half of bacon. Fill shells. Bake at 350 degrees for 20 minutes. Toss remaining cheese, chives and bacon. Sprinkle over potatoes. Bake 10 minutes longer.
