PARMESAN BROCCOLI 1 (1 lb.) bunch fresh broccoli 1 1/2 Tbsp. olive oil 1 1/2 cloves garlic, unpeeled 1/2 c. grated Parmesan cheese 1 1/2 Tbsp. fresh lemon juice salt and pepper to taste Wash broccoli, removing tough ends, peel stems if tough. Split broccoli into separate flowerets. Cut pieces so they are no more than 3-inches long. Put broccoli into steamer basket. Steam for approximately 10 minutes or until broccoli is bright green, but still tender-crisp in texture. Remove onto heated serving dish cover. Meanwhile, heat olive oil with garlic. Remove garlic after 3 to 4 minutes and discard. Pour hot oil over broccoli. Sprinkle with Parmesan cheese and lemon juice. Sprinkle with salt and pepper. Keep hot or serve immediately.
