BAKED SCALLOPS 1 lb. scallops 22 crushed Ritz crackers 1/4 tsp. garlic powder (or to taste) 1/3 c. grated Parmesan cheese 5 Tbsp. melted butter Note: Can use bay scallops or sea scallops. If using sea scallops, cut in half. Place single layer in 9 x 9 x 2-inch baking dish. Mix the garlic powder, Parmesan cheese and crushed Ritz crackers together in a separate bowl. Melt the butter. Add approximately 3 tablespoons to the cracker mixture. Mix well and sprinkle the crumbs on top of the scallops. Drizzle the remaining butter over dish. Bake in preheated 350 degrees oven for 25 minutes. Serves 2.
