HAM POTATO SCALLOP Cheese sauce, celery and flecks of green pepper are added to scalloped potatoes and ham in this flavorful and mellow casserole. 1 medium-sized onion, finely chopped 3 Tbsp. butter or margarine 3 Tbsp. flour 1 tsp. salt 1/8 tsp. pepper 1/2 tsp. dry mustard 1 1/2 c. milk 3/4 c. shredded sharp Cheddar cheese 4 medium-sized potatoes, sliced 1/4-inch thick 1 1/2 c. diced, cooked ham 1/2 c. sliced celery 1/2 c. finely chopped green pepper Saute onion in melted butter until tender. Stir in flour, salt, pepper and mustard. Gradually pour in milk and stirring constantly, cook until sauce is thickened. Add cheese and stir until blended. In a greased 2 1/2 quart casserole, alternate layers of sliced raw potato, diced ham, sliced celery and chopped green pepper; pour over part of the cheese sauce and continue to arrange ingredients in layers until all are used. Pour remaining cheese sauce over all. Bake, covered, in a moderate 350 degrees oven for 1 hour; remove cover and continue baking 30 minutes longer or until potatoes are tender and lightly browned on top. Makes 8 servings.
