ALMOND CHICKEN 2 raw boned chicken breasts (fillets) 3/4 c. toasted almonds, finely chopped Batter: 1 c. flour 2 tsp. baking powder 1/2 tsp. salt 2 Tbsp. oil 3/4 c. cold water 1/4 c. toasted almonds Gravy: 1 c. chicken stock 1 tsp. sugar 2 tsp. soy sauce 1 Tbsp. cornstarch 1 Tbsp. water Dip fillets in batter, deep fry in oil at 350 degrees until brown. Cut into slices and arrange on platter. Heat gravy mixture to boiling and pour onto chicken. Sprinkle almonds over gravy.
