BREADED CHICKEN BREAST 2 whole, skinned, boneless chicken breasts 2 Tbsp. flour 1 large egg 2 Tbsp. water 1 Tbsp. butter or oleo 4 Tbsp. plus 1 tsp. cooking oil salt and pepper 1 c. bread crumbs 1/4 c. grated Parmesan cheese Split chicken in middle; trim the peripheral membrane and bits of fat. Put flour on plate. Put egg, water and 1 teaspoon oil, salt and pepper on another plate and blend well. Put bread crumbs on another plate. Dip the chicken in flour, then egg mixture, then bread crumbs, making sure each piece is well coated. Heat remaining 4 tablespoons oil and butter in large skillet. Cook chicken over gentle heat until golden brown on one side, 7 minutes. Turn and cook until golden brown on other side, 5 to 7 minutes.
