CHICKEN STEW
(Use Frying Chicken)
Use same ingredients as for chicken soup, except use
frying chicken. Boil for 30 minutes. Then add cut up pota-
toes. (Use less water than for soup; enough to cover chicken
plus 1-inch). After potatoes are in for 30 minutes of boiling
time and chicken is tender, remove from heat. Take 1 to 2
heaping tablespoons cream of cornstarch in about 1/2 glass of
cold water. Mix well until lumps disappear. Then mix slowly
into chicken mixture until desired thickness. You may also add
1 small can of cream to make Cream Pea Chicken Stew.
