ORANGE SALMON PATTIES 1 small orange 1 lb. can salmon 1 medium onion, minced 1 large egg 1 c. bread crumbs 3/4 tsp. salt 1/4 tsp. pepper 1/4 c. vegetable oil 1/4 c. mayonnaise 1/4 c. yogurt 2 Tbsp. orange juice Pare skin from orange (remove all white); section, seed and cut into small pieces. Place in large bowl. Remove skin and bones and flake salmon into bowl with orange pieces. Add onion, eggs, bread crumbs, salt and pepper. Mix lightly. Shape into 8 patties. Heat oil in 12-inch skillet. Saute salmon patties, turning once. Drain on paper towels. Combine mayonnaise, yogurt and orange juice. Serve as a sauce over salmon patties.
