BARBECUED COUNTRY-STYLE SPARERIBS 4 lb. spareribs 1 medium-sized onion, cut fine 2 Tbsp. butter or drippings, melted 2 Tbsp. vinegar 4 Tbsp. lemon juice 2 Tbsp. brown sugar 1 c. water 1/2 tsp. cayenne pepper 1 c. catsup 3 Tbsp. Worcestershire sauce 1/2 Tbsp. ground mustard 1/2 c. celery or 1 Tbsp. celery salt 2 Tbsp. fat Preheat oven to 350 degrees. Brown spareribs over medium heat in large skillet; transfer spareribs to baking pan when brown on both sides. Brown onions in butter; add remaining ingredi- ents. Pour over spareribs when hot. Roast 1 1/2 to 2 hours, covered, or until spareribs are tender; remove cover last 15 minutes. Baste spareribs with sauce 2 to 3 times during baking period. Yields 4 to 5 servings.
