OCTOPUS A LA LAZY In a small heavy pan put: 2 lb. octopus, just washed 1 onion, sliced 1 tomato, sliced 2 cloves garlic, sliced 1/2 c. olive oil 1/2 c. dry white wine some basil or bay leaf a little dash of hot red pepper (salt is not needed) Cover with a heavy lid, or place some weight on the lid. Cook on a low fire for 2 1/2 hours. Serve.
