DUTCH OVEN FISH

6 fish fillets (sole or mild
white fish)
1 Tbsp. fresh lemon juice
2 tsp. salt
3 Tbsp. butter
6 bacon slices, fried
1 c. flour
1/4 tsp. ground dill
1/4 tsp. ground nutmeg
fresh ground black pepper
1/4 c. fresh grated Gouda
cheese
Parmesan cheese
1/3 c. soft fresh white bread
crumbs

Sprinkle both sides of fish with lemon juice and salt.
Set aside room temperature 30 minutes. Preheat oven to 500 degrees.
Butter shallow casserole. Pat fillets dry. Dip fish in flour,
dill and nutmeg.
Place in casserole, lay strip bacon on each one. Grind
pepper on top. Combine bread crumbs, Gouda cheese, butter bits
and scatter mixture evenly across fish. Sprinkle with Parmesan
cheese. Bake in upper third of oven 10 minutes or until fish
flakes with a fork.
