FRIED CHICKEN 3 lb. chicken, cut up bread crumbs (plain, not seasoned; homemade French bread crumbs are best) flour 2 eggs 1/4 c. water 1/4 c. creamy cuke dressing or Ranch dressing or creamy Italian or mayo! 1 Tbsp. paprika 2 tsp. poultry seasoning 1 tsp. seasoned salt oil (veggie-peanut oil best) Mix eggs, water, dressing and seasonings. Dredge chicken pieces in flour. Dip in "batter". Coat with bread crumbs. Let sit 15 minutes before cooking to "set" crumb coating. Brown lightly in 1/4-inch oil. Place on cookie sheet at least 1/4-inch apart (otherwise you'll steam the chicken, it won't be crispy). Bake 30 to 40 minutes at 350 degrees.
