CRAB CAKES 1 lb. crab meat 3 Tbsp. butter 3 Tbsp. flour 1 c. milk 1 tsp. salt 1/8 tsp. pepper 1 tsp. Old Bay seasoning (optional) 2 eggs 3/4 tsp. dry mustard 1/4 tsp. Worcestershire sauce 1 Tbsp. minced onion 1 c. fine cracker crumbs or bread crumbs Make a thick cream sauce with butter, flour and milk. Season with salt, pepper, mustard, Worcestershire sauce and onion. Mix the crab meat with the sauce. Chill thoroughly. Shape into 8 or 9 large crab cakes. Roll in cracker or bread crumbs, then beaten eggs, then crumbs again. Fry in small amount of butter or Crisco over medium heat until brown on both sides and heated through and through.
