BAKED CHICKEN WITH POTATOES 1 frying chicken (whole or cut in quarters or smaller pieces) 2 garlic cloves or garlic juice salt and pepper to taste 1/4 tsp. oregano 4 Tbsp. melted butter or margarine 1/4 c. lemon juice 6 medium potatoes, peeled and cut in halves or quarters lengthwise 2 medium onions, cut in wedges 2 bay leaves 1/2 c. water (more may be needed) Rub chicken with garlic and season with salt, pepper and oregano. Place in greased pan. Pour lemon juice and butter over chicken. Place potatoes, onions and bay leaves around chicken and season with salt. Add water, enough to cover bottom of pan. Bake at 425 degrees for 40 to 45 minutes. Turn chicken and potatoes as needed for browning evenly. Baste with juice in pan and add more water if pan becomes dry. Reduce heat to 350 degrees and continue baking more minutes or until chicken leg joint moves easily and chicken and potatoes are well browned. Serves 4.
