GRILLED SALMON STEAKS (Your Peace Officer's Reward!) 1/4 c. dry white wine (sounds rewarding already) 2 Tbsp. olive oil 1 Tbsp. lemon juice 1/2 tsp. salt 1/2 tsp. crushed rosemary (ouch!) 1/4 tsp. freshly ground pepper 4 (6 oz. each) Alaska salmon steaks (fresh or thawed) lemon wedges In a large shallow pan, combine all ingredients except salmon and lemon; stir to blend, then add salmon and marinate in refrigerator for 1 hour, turning 2 or 3 times. Grill mercilessly for 5 to 8 minutes over medium hot charcoal on each side, or until fish flakes with fork. Serve with lemon wedges.
