PAN FRIED HALIBUT 4 slices halibut 2 eggs 1 c. oil (or more, if needed) salt and pepper flour 1 button garlic or a little garlic salt If fish is bought in frozen packages it is better to cut through the slices. I find that they are too thick and hard to cook without burning. Season fish with salt, pepper and flour; both sides. Beat up eggs; dip in floured fish in the batter until both sides are covered. Put oil and 1 button of garlic or garlic salt in large frypan. Be sure you have enough oil to cover at least half of the fish. Fry slowly. As not to burn egg; turn often until golden brown or fish is cooked. I always poke my fork into the middle to make sure it's cooked. Serve with slice of lemon or tartar sauce or any other kind you like. Garlic is optional. But you'll find that using garlic on any kind of fish makes it taste better.
