BEEF SINIGANG
(Beef In Sour Broth)
1 (1 lb.) stewing beef,
preferably beef brisket,
cut into cubes or beef
short ribs
1 piece onion, quartered
(medium size)
2 pieces big ripe tomatoes,
quartered
12 pieces green beans, cut in
1-inch long
1 pouch Mama Sita's tamarind
seasoning (sinigang) mix
15 stalks spinach
2 pieces long green pepper
water to boil beef
fish sauce to taste (patis)

Boil beef until tender, leaving about 4 cups broth. Add
Mama Sita's sinigang mix and stir until well blended. Add
onion and tomatoes. Let boil until vegetables are almost done.
Add leafy vegetables, long beans and pepper last. Add fish
sauce. Serve with steamed rice. Makes 4 to 6 servings.
Variation: Salmon, prawns and pork ribs are also good
for sinigang.
