PERFECT ROAST BEEF 1 (3 1/2 to 8 lb.) eye round roast beef salt and freshly ground black pepper Preheat oven to 500 degrees. Sprinkle roast with salt and pepper. Place on rack in shallow roasting pan. Put beef in 500 degrees oven and bake exactly 15 minutes per pound. At end of the time, do NOT open oven door, shut oven off. Let roast remain in oven from 1 1/2 (for small roast) to 2 (for large roast) hours. The meat will be nicely browned on the outside and juicy within. If seems too cool, before slicing, reheat briefly in hot oven.
