GROUND TURKEY MEATBALLS 1 lb. ground turkey 1/2 c. onion, chopped 1/4 c. celery, chopped 1/4 c. fine bread crumbs 1 egg, beaten 1 Tbsp. soy sauce 1/2 tsp. fresh grated ginger root or dash of ground ginger Sweet and Sour Sauce: 1 (8 oz.) can crushed pineapple 1/4 c. brown sugar 3 Tbsp. cider vinegar 2 tsp. cornstarch 2 tsp. Dijon-style mustard Combine turkey, onion, celery, crumbs, egg, soy sauce and ginger. Shape into small balls 3/4 to 1-inch in diameter. Place on jellyroll pan. Bake at 400 degrees for 15 minutes or until done. Stir meatballs into sweet and sour sauce. Sweet and Sour Sauce: Combine pineapple, brown sugar, cider vinegar, cornstarch and mustard. Cook and stir until thick. Add the meatballs.
