CHICKEN WITH LIME 1 broiler/fryer, cut in parts, skinned (if desired) 1/4 tsp. pepper 3 Tbsp. oil 1 Tbsp. minced onion 1 clove garlic, minced 1/2 tsp. ground cumin or chervil 1/2 tsp. ground coriander 1/4 tsp. crushed red pepper or scant 1/8 cayenne (optional) 1/4 tsp. turmeric 2 Tbsp. soy sauce 1 lime Sprinkle chicken with black pepper. Heat oil in large skillet. Brown chicken on all sides. Push chicken to side of pan. Add onion and garlic; saute until golden. Add cumin, coriander, red pepper and turmeric. Stir. Add soy sauce. Reduce heat and cook slowly, covered, stirring frequently about 20 minutes or until fork can be inserted into chicken with ease. (If necessary add a little water during cooking to keep pan from sticking.) Squeeze lime juice onto chicken pieces before serving. Serves 4.
