SHRIMP FRIED RICE (Smoking Rice) 3 c. cooked rice 4 to 5 strips bacon 1/4 c. scallions 1/4 c. bell pepper 1 1/2 lb. peeled and deveined shrimp 1 c. bean sprouts 1 tsp. black pepper 1 tsp. crushed red pepper 1 Tbsp. soy sauce 3 eggs For best results cook rice the night prior to preparing shrimp fried rice. Fry bacon until very crisp and remove from frying pan. Saute scallions and bell pepper in bacon fat, add shrimp and continue to stir. Drain liquid from bean sprouts. Add cooked rice to shrimp and vegetable mixture. You will need to add about 1/4 cup more cooking oil at this time to prevent rice mixture from sticking. Add crumbled bacon. Continue to stir adding black pepper, crushed red pepper, soy sauce and bean sprouts. Add eggs one at a time, stirring eggs thoroughly until cooked. Soy sauce may be added to individual servings if desired. Serves 4.
