KATSU-DON (Braised Pork With Eggs) Japan Meat: 1 slice pork 2 eggs 1/4 onion 1/2 c. flour bread crumbs Sauce: 1/2 c. soup stock 1 Tbsp. sweet sake 1 1/2 Tbsp. soy sauce 1/4 Tbsp. sugar Pound the meat with a steak mallet and season with salt and pepper. Dip the meat into the flour and then into 1 beaten egg. Dip the meat into the bread crumbs and fry thoroughly in the oil at 320 degrees. Cut the fried pork into 1-inch wide strips and slice the onion into thin slices. Mix the sauce ingredients together and heat until just boiling. Add the onion and boil in the sauce until it is softened. Beat the remaining egg. Place one portion of the fried pork back in the skillet and pour the egg over the top. Cook until the egg sets. Fill a bowl 3/4 full with cooked rice and serve with the pork, onion and egg on top. Serves 1.
