IRISH STEW 2 to 3 lb. boneless stew meat 1 can tomatoes 3 Tbsp. cooking oil 4 potatoes, peeled and cubed 2 cloves garlic, chopped fine 2 onions 1 bell pepper 4 to 5 carrots, sliced 1 can green beans Brown the stew meat (which you have seasoned to taste) in cooking oil. Add chopped onions and bell pepper. Stir well until they start to brown. Add tomatoes and 1 can water. Simmer until meat starts to become tender, about 1 hour. Add carrots, garlic, potatoes and drained green beans. Cook for 1 more hour (slow) until meat and vegetables are tender. Check seasoning. More water may be added, if needed. Yields 6 servings.
