FILET MIGNON IN WINE 4 thick (2-inch) filets 1 tsp. salt 1/2 tsp. black pepper 1/4 c. butter 4 small onions, peeled, halved 1 c. red wine Rub filets with salt and pepper. Melt butter in heavy frying pan. Add steaks; brown on both sides. Reduce heat to simmer. Add onions and wine. Cover skillet tightly; simmer steaks 30 minutes. Yield: 4 servings.
