OVEN-FRIED CHICKEN 2 1/2 to 3 lb. broiler/fryer chicken pieces 1/4 c. shortening 1/4 c. butter or margarine 1/2 c. flour 1 tsp. salt 1 tsp. paprika 1/4 tsp. pepper Heat oven to 425 degrees. Wash the chicken and pat dry. Melt shortening and butter in a baking pan, 13 x 9 x 2-inches in the oven. Mix flour, salt, paprika and pepper. Coat chicken thoroughly with the flour mixture. Place chicken skin side down in the pan. Bake, uncovered, 30 minutes. Turn the chicken and bake until thickest pieces are fork-tender, 20 to 30 minutes longer. Variation: Crunchy Oven-Fried Chicken: Substitute 3 cups corn puffs cereal, crushed, for the flour mixture. Roll chicken in the melted shortening and butter, then coat with the cereal.
