ROAST BEEF AND YORKSHIRE PUDDING

1 beef roast, standing or
rolled rib

Yorkshire Pudding:
1 c. flour
1/4 tsp. salt
3 eggs
1 c. milk
1/4 c. oil or pan drippings

Forty five minutes before roast is done, place oil or
pan drippings into 8 x 12-inch pan or dish and place in 400 degrees
oven for 15 minutes. While pan is heating, mix flour, salt,
eggs and milk in blender. Thirty minutes before roast is done,
pour mixture into hot pan or baking dish. Bake until pudding
has risen and is slightly brown. Must be served with gravy.
Note: Baking dish and drippings must be hot or pudding
will not rise.
