CHICKEN WITH POTATO STUFFING 1 large chopped onion 1 c. chopped celery 1/2 c. butter 4 c. mashed potatoes 2 beaten eggs 1 c. instant stuffing Saute onion and celery in butter. Add to mashed pota- toes. Stir in eggs and dry stuffing, 1 teaspoon salt and 1/4 teaspoon pepper. Turn into greased 9 x13-inch pan. Top with pieces of chicken. Brush chicken with melted butter; sprinkle with salt, pepper and paprika. Bake at 375 degrees for 1 to 1 1/2 hours.
