BAKED VEAL CUTLETS 1 1/2 lb. veal cutlets 1 c. olive oil 1 c. bread crumbs salt and pepper 3 Tbsp. grated Parmesan cheese 3 onions, sliced 1 1/2 lb. tomatoes, sliced Dip cutlets in oil. Mix together the bread crumbs, salt, pepper and cheese. Coat cutlets with this mixture. Grease a baking dish with the oil and put half the sliced onions on the bottom of the dish. Arrange the veal on top of the onions. Mash the tomatoes and spread over the veal. Top with remaining onions. Bake at 375 degreesfor abut 30 minutes. (Serves 4).
