OVEN FRIED CHICKEN 2 whole boneless, skinless chicken breasts, split (about 1 lb.) 1/2 tsp. freshly ground pepper 1/4 tsp. salt 1 egg, beaten Italian-style bread crumbs 1 Tbsp. butter, melted Season chicken with salt and pepper. Preheat oven to 400 degrees. Dip chicken in beaten egg, then in crumbs. Place chicken on a rack in a baking pan. Drizzle with butter. Bake 20 to 30 minutes, depending on size of chicken breasts.
