LIME MARINATED SWORDFISH (With Cilantro Butter) 4 to 6 oz. (1-inch thick) swordfish steaks 2 1/2 Tbsp. lime juice salt and freshly ground pepper 1/2 c. butter 1 garlic clove, minced 3/4 c. fresh cilantro, finely chopped 1/2 tsp. dried red pepper flakes lime wedges Place swordfish in nonaluminum dish. Pour lime juice over. Season with salt and pepper. Marinate 20 minutes, turning once. Prepare barbecue or preheat broiler. Melt butter in heavy small saucepan over medium heat. Add garlic and cook 30 seconds. Mix in cilantro and pepper flakes and cook until cilantro is heated through, about 1 minute. Grill swordfish until opaque (about 7 minutes per side), basting frequently with cilantro. Butter. Serve with lime wedges. Makes 4 servings.
