BLACKENED FISH

1 Tbsp. paprika
2 tsp. salt
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. cayenne pepper
1/2 tsp. white pepper
1/2 tsp. black pepper
1/2 tsp. thyme
1/2 tsp. oregano

Mix spices in a bowl. This will coat about one pound of
fish.
Pour a little olive oil in the bottom of a frying pan
and place over high heat. Let the oil get quite hot. Dip the
fish fillets whether they be red fish, halibut, red snapper or
whatever in the spice mixture, coating well on both sides and
place in the hot oil. Fry for about 2 minutes; turn over and
fry for about 2 minutes more. Add more oil, if necessary. The
New Orleans style is to let the fish get black. Nicely browned
is good enough. When serving, have a tall glass of a cold
drink handy.
