GOLDEN FRIED CATFISH 6 small catfish, cleaned and dressed 1 tsp. salt 1/4 tsp. pepper 2 c. yellow cornmeal (self-rising) vegetable oil Sprinkle catfish with salt and pepper. Place cornmeal in a paper bag; drop in catfish, one at a time and shake until coated. Fry in deep hot oil (375 degrees) until golden brown; drain well. Serve hot. Yields 4 to 6 servings.
