OVEN FRIED FISH 1/4 c. margarine, melted 1/4 tsp. pepper 1 (1 lb.) fillet of flounder or other firm white fleshed fish 1/4 tsp. basil 1 Tbsp. lemon juice 1/4 tsp. paprika 1/4 c. dry bread crumbs 2 Tbsp. oil 1/8 tsp. garlic powder Combine margarine, lemon juice, pepper, paprika, basil and garlic. Dredge fish in the mixture; roll in bread crumbs. Spread oil in shallow baking dish and arrange fish in one layer. Spoon remaining herb mixture over fish. Bake, uncov- ered, in a 475 degrees oven for 15 minutes or until fish flakes easily with a fork. Serves 4.
